Cream-Сливки.
Half and half, half cream — 10% жирности
Single cream, Light cream — 20% жирности
Heavy cream, double cream ,whipping cream- >30% (30%-50%) жирности
Leek — лук-порей, обычно используется только белая часть. Вкус луковый:).
Lentil — чечевица. Вкус чечевичный:)

Как я заметила, в американских книгах очень много супов-пюре со сливками (cream). Во многих рецептах можно обойтись вовсе без сливок или спокойно заменить half-and-half или coffee cream. То, что продается в магазинах как heavy cream или whipping cream, для супов слишком жирно IMHO.
В десертах без heavy/whipping cream не обойтись, если нужны взбитые сливки. Кстати, где-то читала, что ultra-pasteurized плохо взбиваются. Только у нас в магазинах другие не водятся, даже organic. Если взбивать не надо, то обычно тоже можно взять half-and-half или coffee cream.
